Black Dried Lime
لومي أسود
Citrus aurantiifolia
Fermented then dried, sour and smoky.
Limes boiled in brine and then sun-dried until they blacken and hollow out. The result is nothing like fresh lime: deeper, sour, faintly fermented, and central to Gulf and Iraqi cooking.
